A super fresh and tasty Peru. At its best from a medium to dark roast. Fuller bodied with medium to low acidity. This cup goes after more potent chocolaty and nutty tones. A bit of toasted walnut with hints of a limey acidity fading to a bakers chocolate kick with some herbal spice hints. Light roasts are pretty dry and higher acidity, not enough of a chocolaty kick to balance it out. This is where medium roasts shine, developed chocolaty tones, good body with nuttier accents. Pretty low acidity with a couple day setup. Dark roasts work nicely as well, a bit crisper than some with nice rich aromatics, a bit on the smokier side once you hit 2nd crack.

Description

Coming from family-owned farms organized around the Asociación Provincial de Cafetaleros Solidarios San Ignacio (APROCASSI), which was established in 2000 to support coffee producers in the region of Cajamarca, Peru.

On average, each producer cultivates 7 hectares of land with a diversity of crops including coffee. APROCASSI provides training and financing aimed at improving coffee quality and yields to increase farmer earnings. APROCASSI has also invested in infrastructure to improve drying processes and reduce the burden of transporting coffee long distances.

Roasting Notes: Easy to roast for the most part, medium to low chaff and even roasting. These beans take a bit longer in the roaster, needs decent heat. Watch for a sheen on the surface to a spec of oil for those medium to dark roast points.
