A very cool cup at the before 2nd crack roasts. A medium bodied cup (slightly thinner than most Colombians); awesome hints of floral, caramel and soft fruit can be found in the medium to border line dark roasts, these tones are accentuated at lighter roast points and can be a little over the top for some. This cup does have a darker toned balance with a more nutty (more walnut than peanut) and chocolaty edge. 2nd crack roasts are better with the more traditional Colombian offerings, its mutes up this cup and is a little plain Jane.

A very cool jazzier than average Colombian offering. A bit more acidity and floral factor than something like the Popayan Supremo.

Colombia Cauca El Totoro is sourced from family-owned farms located in the municipality of El Totoro within the department of Cauca, Colombia. Ciro Antonio Camayo, Maria Teresa Paz, Ramiro Antonio Vainas, Arley Arturo Camayo, Edelmira Camayo, Loborio Zambrano, and Aiber Fredy Vainas collaborate with an export company called Banexport to gain access to technical support for best agricultural practices. Banexport has matched these regional producers because of their shared commitment to exquisite coffee processing and loving care for their farms, which produce complementary profiles. Each of these producers takes great pride in their abilities to manage their farm with the support of their children who have learned to cultivate coffee through a program called School and Coffee, which focuses on increasing income to pay for their education.

Roasting Notes: Easy to roast, good at any roast level but the cool features of this cup will shine before 2nd crack. Doesn’t have the body to hold up to 2nd crack and beyond roasting, turns a little bitter. Great cup for a bit of that caramel floral tone. Great everyday drinker.
