A great semi-lighter toned Brazil, very good sweetness upfront regardless of roast level. Sweet, floral with a nice soft fruit tone upfront at those lighter roasts, balanced with just a hint of a nutty chocolaty factor. Very light will pick up a little herbal tone once the cup mellows with a 3-4 day setup. Medium roasts bring great balance between the light and dark tones, mutes up a little bit of the floral and accentuates the nutty/chocolaty factor, still a bit more jazzy and lighter toned than many traditional Brazil’s. The darker roasts do mute up most of the acidity (making it a candidate for you low acidity fans) but still leaves a cool sweet tone, the fruitiness of the cup is gone but can still be detected with a little twinge in the dark chocolate and smoky notes.

Description

Brazil Dulce is from three estates located in three growing regions of Brazil and blending two processing techniques (natural and pulped natural). Luiz and Flavia Saldanha, a husband and wife team who are both Q-graders and founders of Capricornio Coffees, created the Natural Pulped Natural blend to ensure a distinct and complex Brazilian profile could be replicated year after year.

These beans are a combination from the Fazenda Santa Bárbara (owned by Luiz and Flávia) located in the Norte Pioneiro do Paraná region, Fazenda São Francisco (owned by Selma Vieira, a farm with the same name as our buddy Nilton) located in the Sorocabana Region, and Fazenda Santo Antônio (owned by Vitor de Barros) located in the High Mogiana Region.

Great cup for blending or drinking as a S/O.

Roasting Notes: Good to roast this one a little slower, muting up some of the acidity is a good thing for most. 24 hours after roasting, the lighter roast was everyone’s favorite, great developed soft fruit with sweet floral.  After about 4-5 day setup when the cup mellowed a bit, the stronger medium roast took the place as the tastiest with a little more developed nutty tones. Darker roasts were still tasty but killed the uniqueness of the cup, tasted like a traditional Brazil.
