A half pound each of:

Panama Premium Boquete – Damarli Estate – Catuai Natural Processed –
A very jazzy cup of coffee with a pretty strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be fairly bright with pretty strong citrus floral and fruit tones. The fruitiness is almost winy and more reminiscent of a red grape-skin; complex with a little astringency upfront. The cup will be pretty front loaded at the light roast points but will have a little herbal chocolaty balance that is accentuated the darker you roast. Medium roasts bring much more traditional darker tones to the cup and are where anyone who doesn’t like too much acidity should start, still a bit lemony upfront but fades quickly into soft fruit tones and more potent spicy malty/chocolaty notes. Dark roasting is almost a shame, gets a bit roasty and tends to lose those exotic winy and floral tones. Darker roasts into 2nd crack taste good but mostly full of smoky semi-sweet chocolate tones.

Panama Premium Boquete – Damarli Estate – Typica Natural Processed-
A very jazzy cup of coffee. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be bright with stronger citric (lemony) floral and fruit tones but we found it very drinkable. The fruitiness is a bit muted compared to last season but is complex with a little astringency upfront. The cup will be predominantly lighter toned at the light roast points but will have a little chocolaty balance that is accentuated the darker you roast. Medium roasts bring much more traditional darker tones to the cup and are where anyone who doesn’t like too much acidity should start, still a bit lemony upfront but fades quickly into soft fruit tones with a rich and smooth malty/chocolaty undertone. Picked up some smoky and roasty tones close to second crack, we thought the Caturra held up better at the darker roast points. Past a strong medium roast one will lose those exotic winy and floral tones. Darker roasts into 2nd crack taste good but mostly full of smoky semi-sweet chocolate tones.

Panama Premium Boquete – Casa Ruiz – Berlina Estate – Typica Washed Processed
Great from light to dark. Medium acidity, smooth and creamy, nice spicy more nutty/malty tones with a hint of floral in the aftertaste. A little crisper and more floral if you shoot for lighter, a little more robust and smoky if you go darker, a flexible bean but for smooth and rich, medium roasts are where its at. One can get a little caramel at the light to medium roasts and hints of soft fruit as the cup cools, adding a cool sweet edge to the mix.

Panama Premium Boquete – Finca Dona Chela – Catuai Washed
We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

Panama Premium Boquete – Garrido Estates – Washed SHB
A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level which made it very easy to drink. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the more nutty tones turn into hints of caramel and accentuate the malty cup profile, becoming the predominate tone.  Dark roasts turn pretty strong but the nice sweeter malty cup profile mixes nicely with smoky and roasty notes.

Panama Premium Boquete – Finca Stacy – Noble Caturra “Redwood” Natural
A very jazzy cup of coffee with a strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be fairly bright with pretty strong citrus floral and fruit tones, very tasty if you like such things. The fruitiness is wild, ranging from grape to more traditionally red fruit. The cup will be pretty front loaded at the light roast points but a little chocolaty factor can be found when the cup cools. Medium roasts bring much more balance to the cup with some darker tones but tone it down a bit, which is good for some, bad for others. Too close to 2nd crack and the acidity and fruit is almost removed from the cup, still tasty but a shame to lose those exotic winy/fruity and floral tones. Darker roasts taste good but mostly full of roasty and semi-sweet chocolate tones.
