Great from light to dark. Medium acidity, smooth and creamy, nice spicy more nutty/malty tones with a hint of floral in the aftertaste. A little crisper and more floral if you shoot for lighter, a little more robust and smoky if you go darker, a flexible bean but for smooth and rich, medium roasts are where its at. One can get a little caramel at the light to medium roasts and hints of soft fruit as the cup cools, adding a cool sweet edge to the mix.

Description

A fantastic top lot of washed processed coffee. Beautiful beans and a very high scoring lot. Great from light to dark. This farm is owned and operated by Casa Ruiz, which is a dominating force in Panama coffee. Originally started by Keith’s grandpa, the Ruiz family now has a minority holding in Casa Ruiz.

One of the rare farms to still have the original Typica trees, some of the oldest in Panama dating back almost 100 years.

Our buddy Keith’s grandpa started Casa Ruiz, and although this farm is technically the only Casa Ruiz coffee on the list, many of the other small lots we carry are produced by members of the Ruiz family, of which Keith is a part of.

Berlina Estate is an 84 hectare farm located in the Boquete District of northern Panama. Clemente Vega manages the farms of Berlina Estate and the approximately 300 workers that are employed during harvest. When it comes to their coffee, Clemente ensures that all cherries that are picked for Berlina Estate’s production are 100% ripe. They hand separate any cherries that don’t meet their standards, to guarantee the highest quality and intensity of flavor.

Tasting Notes: Great from light to dark. Medium acidity, smooth and creamy, nice spicy more nutty/malty tones with a hint of floral in the aftertaste. A little crisper and more floral if you shoot for lighter, a little more robust and smoky if you go darker, a flexible bean but for smooth and rich, medium roasts are where its at. One can get a little caramel at the light to medium roasts and hints of soft fruit as the cup cools, adding a cool sweet edge to the mix.

Roasting Notes: Medium to low chaff, darkens up a bit quickly so make sure you see the expansion in size if shooting for lighter roasts.  A little two toned in its roasting but still a lovely bean and screen. At the lighter roasts, setup time is important, too soon and it will come off with more dry nutty tones, a couple days later, hints of caramel/malt and floral.
