A very clean and rich cup of Guatemalan coffee. Although a Pacamara, this coffee does not follow the earthiness that often accompanies the strain. Lighter roasts show good soft fruit tones upfront while not being overly acidic, a little hint of a lemony floral and balanced with a nice malty cup profile. A bit sweeter than average for sure and a nice clean tasting cup. Medium roasts bring the best balance accentuating the darker tones in the cup slightly and reducing a little bit of the more acidic fruitiness of the cup. Darker roasts get real full bodied but does not retain the cool sweeter soft fruit tones, smoky, malty and strong.

I always have a sweet spot for Pacamara coffees, not only are they usually huge beans (which is always novel) but they carry a very sweet versus nutty earthy cup profile which I personally love.

This Guat is coming from an estate located in the community of San Antonio within the municipality of Santa Cruz Barillas in the department of Huehuetenango, Guatemala. Mike Ottoniel Mérida Reyes owns and manages San Miguel Bonanza, which has 110 acres of land cultivated with coffee. Mike has been working in coffee for over 40 years and supports his family of five through coffee. He also works closely with the community of Blanca Flor and enjoys hosting a Christmas celebration each year.

Roasting Notes: An easy coffee to roast, holds up nicely from light to dark. Although a Pacamara, it is not absolutely huge beans, a decent size but not abnormal like the Nicaraguan or others. Most thought it shined best from a light to medium roast but will give some uniqueness to the dark roast fans as well.

    This is one of the best “rich” coffees I’ve roasted in awhile. High charge temp and roasting to a City+ level (beyond first crack and well short of second crack) yields a substantial acidity that mellows after several days and serves as the backbone for a fruity, chocolate malt. It’s so good that I’m giving most of mine away it as Christmas gifts, so I’ve logged on to order more. This is a single origin that could easily seem like a blend.
