A great semi-exotic daily drinker. Best right around the medium roast mark but holds darker roasts nicely as well. Lighter roasts do show some jazzy acidity but its pretty mild for an Ethiopian, good to build the more chocolaty tones by not ending the roast too light. Fuller bodied for a Yirg with less than average acidity, hints of floral before 2nd crack but its mostly in those wonderful aromatics, hints of jasmine and soft fruit let you know its something special. A bit sweeter and smoother, less tea like chocolaty factor than its cousins, some could mistake it for a clean Central American cup if not for those unique aromatics and small hints of spice.

A lovely new offering, rich and chocolaty with some lovely spice aromatics and medium to low acidity.

Coming farms organized around the Adado Cooperative located within the coffee region of Yirgacheffe in the Gedeo Zone, Southern Nations, Nationalities and Peoples’ Region, Ethiopia. The Adado Cooperative currently has 1,128 members.  In 2002, the cooperative joined the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), an umbrella organization established in 2002 to support a sustainable coffee supply from cooperatives in the Gedeo ethnic region of Ethiopia. There are twenty-six other cooperatives affiliated with the YCFCU totaling more than 45,000 members.

Roasting Notes: Easy to roast, slightly two toned but not like a natural processed. Medium chaff, no hinderance there. Being a little lower acidity, we thought a quicker roast shooting for a city+ to full city was the way to go, basically a hotter roast, to a medium roast level. Day 1 of drinking cup was still a little sharp, by day 2-3 it was very smooth and rich.
