A great clean cup, perfect example of a high rated El Sal that follows the terroir of the country and area. Being a very stand up cup, it will pull fans from light to dark roasts. Lighter roasts will accentuate the slightly fruity acidity and floral/tea like aspect of the cup. Not a super high acidity coffee but it will definitely be seen at those lighter roast points. Medium roasts will pull some balance with a little sweeter chocolaty edge and create a cool mix of tones, semi-similar to a nice Costa Rican coffee but less nutty. Darker roasts get full bodied with very low acidity, more of a dark chocolate semi-sweet cup with a just a hint of floral; the roasty/smoky notes will compliment this cups attributes.

Description

Renato Arturo Romero is the owner of Lorena Estate, a very small farm located in the prime coffee growing area of Santa Ana.

Renato grows only Bourbon coffee trees and being a small farm, takes meticulous care of his trees. Using his neighbors estate (Beneficio El Carmen) to process his coffee makes it possible for him to create his own product and not sell out to the larger mill structure.

His farm starts at about 1300m, slightly lower than average but after one taste, you will see his land and trees are slightly magical. Easily competing if not surpassing his higher altitude neighbors.

Roasting Notes: Easy to roast assuming you know what you like. If you prefer lighter roasts, take it lighter. Like dark roasts? Roast it darker. If in doubt a nice strong medium roast will most likely please all crowds. Not being a high acidity coffee, if you want to add more jazz and exotic tones to the cup, try roasting it a bit quicker to your favorite roast point, leaves it more floral and crisp.
